Very common and easy to spot because of their intense yellow colour, chanterelle mushrooms are a particularly popular variety with those who frequent the woods regularly, also because they are excellent in cooking, as in this case in ravioli. The mushrooms' aroma is sweetish and the scent is reminiscent of apricots. Some call it the 'parsley of mushrooms' because of its strong flavour.

Dough 55%: durum wheat semolina, soft wheat flour type 00, pasteurised eggs, water Filling 45%: fresh ricotta (milk, milk enzymes, rennet), chanterelles 19% of filling, 3.8% of total mozzarella (milk, salt, rennet, acidity corrector: citric acid) Grana Padano PDO cheese (milk, salt, rennet, preservative: lysozyme (natural protein extracted from egg)) pasteurised eggs, chives, salt.
Pour the frozen ravioli into boiling, salted water. Cooking time approx. 8 minutes.
Serve as a first course with grated Parmesan cheese and melted butter or with cream sauce.
