Fresh frozen egg-pasta with filling
Filling ingredients 56%: ricotta (whey (MILK), salt, acidity regulator: lactic acid), mushrooms in variable proportion 20% (Agaricus bisporus, Pleurotus ostreatus, Lentinus edodes, Pholiota nameko), bread crumbs (soft WHEAT flour "0", water, salt, brewer's yeast), cep mushrooms 8% (Boletus edulis and its group), Grana Padano DOP cheese (MILK, salt, rennet, EGG lysozyme), sunflower oil, salt, parsley, garlic. Pasta ingredients: durum WHEAT semolina, barn EGGS 18,5%, water. It may contain: MUSTARD, SOY.
- Without defrosting add the pasta to a pasta cooker full of boiling salted water. - Once water returns to boil, cook the pasta for 4/5 minutes and stir occasionally. - Drain the pasta; - Season to taste. For perfect pasta, always use one litre of boiling water for every 100g of pasta.
